30-Minute Baked Chicken Meatballs


-2 lbs ground chicken

-1 egg

-2 tbsp olive oil

-1 cup panko bread crumbs

-1/2 cup shredded parmesan cheese

-Seasonings to taste: salt, pepper, Italian blend, garlic powder, onion powder, chili powder, paprika to taste


  1. Add chicken to large mixing bowl. Add seasonings, olive oil, and egg and mix until combined.

  2. Roll into balls (mine made 28) and place on a lined or non-stick sprayed baking sheet.

  3. Bake at 400 degrees for 20 minutes. Do NOT overcook, they should start to only slightly brown. Make sure cooked through to an internal temperature of 165 degrees.

Served deliciously over pasta or spaghetti squash with marinara sauce!
