"Let's Taco 'Bout It" Salad



INGREDIENTS

For the salad:

2-3 cups (or about 1/2 of a whole head) iceberg lettuce

1/2 large tomato

1/4 cup canned black beans

1/4 cup reduced fat Mexican shredded cheese

1 serving (14 chips) Trader Joe's blue corn tortilla chips

2tbsp Trader Joe's island salsa (or other salsa of your choice!)

*Yummy options to add can include avocado, hot sauce, or sautéed peppers and onions


To prepare the taco chicken:

1 lb ground chicken

1 packet low sodium taco seasoning mix

2/3 cup water


DIRECTIONS

  1. Prepare ground chicken according to seasoning mix instructions. For this recipe, brown meat in medium-high heat skillet. Then, add seasoning packet plus 2/3 cup water. Bring to a boil and then reduce heat to simmer. Cook uncovered until most water has been evaporated or about 6 minutes.

  2. Layer iceberg lettuce, tomatoes, black beans, in a large bowl. Top with ground chicken (I used 6oz for this meal), cheese, and salsa. Enjoy with chips on the side or crush them up to use as a salad topper!
