Creamy Instant Pot Coconut Mashed Potatoes

Mashed potatoes never were so easy! One pot plus a hint of coconut cream for a sweet flavor and texture boost.


  • 2 lbs fingerling potatoes

  • 1/4 cup coconut cream

  • 1 tbsp butter

  • 1/2-3/4 cups almond milk

  • 1tsp Salt

  • 1 tsp Garlic powder

  • 1tsp Italian seasoning

  • 3/4 cup water


  1. Add fingerling potatoes and water to Instant Pot. Cook on High for 10 minutes. Do a quick-release when cook time is up.

  2. Drain water and add coconut cream, butter, almond milk and seasonings and mash until well combined, or to mashed preference.

  3. Serve with protein and veg for dinner and ENJOY!

Serve with protein and vegetables for a healthy weeknight meal!
