6 oz Salmon
2 cups Spring Mix
1/2 cup Sliced Strawberries
1/2 Sliced Beefsteak Tomato
1/4 English Cucumber, quartered
2 tbsp Bolthouse Farms Cilantro Avocado Dressing
1 oz Queso Fresco Cheese (or substitute Feta cheese)
1 tbsp Toasted Hemp Hearts (*optional for crunch)
Prepare the salmon in the oven. Preheat oven to 415 degrees. Season salmon with salt, pepper, fresh parsley or other herbs as desired. Cook for about 15-17 minutes until internal temperature reaches 145 degrees.
Mix greens, strawberries, cucumbers, and tomato into bowl. Top with dressing and salmon. Optional to add crunchy toppings like toasted hemp hearts, roasted pecans or pistachios, or on elf my favorites, pork rinds.
